Sheet Pan Salmon with Dill Potatoes

The One Where All 4 Family Members Went Back For Seconds.

Let me start by saying this salmon has no business being this good. It’s just plopped on that sheet pan – no cutting, prepping, etc. Then it gets topped with mayo and Dijon and baked for, like, all of 7 minutes. Shake of red pepper flake, sprinkle of dill, squeeze of lemon. So simple, and yet. Holy smokes.

May I, though, also direct your attention to those dill potatoes!! Double exclamation!!

They get steam-roasted to perfection and then tossed in garlic butter with borderline too much dill (which is always the right amount of dill).

I made them and immediately texted multiple friends: “you have to make these!!”

You can bring the whole sheet pan out to the table (as we often do), or transfer to a big platter to serve:

Sheet Pan Salmon with Dill Potatoes

Description

Simple and delicious salmon and potatoes roasted on a sheet pan, and covered in a garlic dill butter sauce! One of my family’s favorite dinners.


Ingredients

Dill Potatoes:

  • 24 ounces yukon baby gold potatoes
  • 1 1/2 tablespoons olive oil
  • 1 1/2 teaspoon kosher salt
  • 1/2 cup water
  • 3 tablespoons butter, melted
  • 1 clove garlic, grated
  • 1 tablespoon freeze dried dill, or 3 tablespoons fresh dill

Sheet Pan Salmon:

  • 1.5 pounds salmon filet (I use skin-on)
  • 3 tablespoons Dijon
  • 2 tablespoons mayo
  • red pepper flakes, more dill, lemon wedge for serving

Instructions

  1. Prep the Potatoes: Preheat the oven to 450 degrees. Toss potatoes, oil, and salt on a sheet pan. Add water directly to the pan.

  2. Roast the Potatoes: Roast potatoes for 30 minutes. I recommend stirring every 10-15 minutes to prevent sticking. During this time the water will evaporate / steam the potatoes, and they will get beautifully golden at the same time. (Some sticking is normal and okay – just use a good spatula to firmly get under the potatoes and lift them to keep them all moving around and roasty toasty.)

  3. Prep the Salmon: Move potatoes to the side. Add the salmon filet in one piece to the center of the sheet pan, skin side down. Season with 1/2 teaspoon salt. Mix the mayo and Dijon in a small dish; spread over the top to cover. Bake for 6 minutes. Then broil close to the top of the oven for 2-3 more minutes to get browning on the salmon. You want to bake it until it flakes apart easily – see notes.

  4. Garlic Butter: Mix the melted butter, grated garlic, and dill; spoon over the hot potatoes. Sprinkle the salmon with dill and red pepper flakes.

  5. You’re Done! Squeeze lemon over the whole thing. Flake big chunks of salmon off to serve with the potatoes. Unreal.

Notes

Salmon Doneness: Internal temp for salmon can range from about 125 to 145 degrees Fahrenheit (personal preference). I don’t usually temp my salmon. I buy salmon from reputable places that I know have handled it safely, and then just bake it until it flakes apart easily and still looks juicy (see photos and video). If you want to cook it according to USDA recommendations, you can cook it until 145 degrees – but many chefs prefer salmon at a slightly lower temp (like 130 degrees) to retain that buttery juicines.

    I just bought the ingredients for this and cannot wait to make it. It sounds and looks delicious! I am not a fan of mayonnaise (even when people swear you can’t taste it…I can). Do you think plain yogurt or sour cream would work as well? Do you have another recommendation so I can avoid the mayo? Thank you in advance! 🙂

    This was outstanding and very easy to prepare. I added some broccolini tossed with olive oil, salt, and pepper when I added the salmon to the pan. I had the salmon already seasoned and spread with the mayo/mustard mixture so I could get the pan back in the oven as quick as possible. We’ll be having this regularly, we love sheet pan salmon recipes and this one is a keeper!! Thanks for sharing!

    This was a restaurant quality dish. I made it because Lindsey mentioned her kids loved the potatoes. Mine were equally pleased with the flavors and tolerated the fish because of the potatoes. This was a great way to get the kids to try something new with other “safe” foods on the plate. I added breadcrumbs on top of the salmon and served with sautéed asparagus and spinach on the side.

    Flavor was great! Although would recommend adjusting cook time for salmon.. served it raw for my whole family. Had to go back in our oven for additional time.

    I forgot to mention that my piece of salmon, which was exactly 1.5 pounds, needed a lot longer to cook through than what the recipe called for so just tinker with the time to get the doneness to your liking.

    This is the first time ever that I am leaving a public comment regarding a recipe. I usually garnish the information and then hack it, making my comments useless.
    This is the best and simplest salmon, roast potato meal !
    (As a side, my side was a simple, shaved, zucchini, carrot, radish and apple mix with a mild asian dressing and sunflower microgreens. Worked great.)

    Made tonight for dinner and was a total hit even with the kiddos. Next time would cut down the dijon mustard and my salmon required an additional 4-5minutes to cook thru. The potatoes were delicious. Will be making that way again!

    Thank you, beautiful recipe – I will roast it more than that though – both because my husband, who is Filipino, prefers it that way AND because, we live in America, the country of my birth, the country of my family for over 400 years (yes, we are still immigrants ultimately) – the country which has in the last 13 months fired over 5000 food inspectors, eliminated basic scientific advice on vaccines, and pretended that infections no longer exist, as far as I can tell. (Worth noting, I am a scientist, so maybe I’m biased…)The potatoes are starting now, the salmon will follow.

    Definitely a recipe to try again. Halved it for 2 of us & used fresh dill. I should have taken the potatoes out before broiling, as they were perfect beforehand (got dark under the broiler). My salmon was pretty thin, so overcooked it a tad under the broiler. Now I know what to tweet for next time I make this. Flavor profile was great!

    This was really good recipe for salmon that switched up the flavor profile! I can tell a lot of testing and effort went into this recipe, especially with the method of cooking with a touch of water.     Very good dish. Next time I’ll cut back on the amount of salt. I used only 1 lb salmon and 14 ounces of potatoes so that was my mistake with the salt. I served with a spinach side salad.
